Tortellini, Chicken Sausage & Vegetable Soup

We have a few variations on this pot of deliciousness, this is the most recent iteration. This soup can be super easy and quick or complex depending on your mood. If you’re looking for a quick nourishing meal then use the packaged tortellini and cans of broth. If you want to get complex with it make the pasta and stock from scratch. Either way it’s delicious and is great for a party. I’m trying to get more vegetables into every meal we eat lately so this version of the soup has broccoli, celery, carrots, and tomatoes in addition to the usual spinach. You could probably toss in some finely chopped mushrooms, sweet potato and even cauliflower and it would be delicious.

I generally use a plain cheese tortellini as I feel that the broth and vegetables have enough flavor that adding something else to it actually takes away from the taste. This last round I used a chicken and apple sausage but I suspect any chicken sausage would be tasty, say a sweet or spicy Italian one might add some extra bite.
