Quiche

I LOOOOOVE quiche, and I indulge that love at every opportunity. It’s part of why I love having chickens because we always have plenty of eggs. I can eat several slices in a sitting… They do take a little preparation so this isn’t a quick meal but it’s worth the wait for sure.

Also, I have, over time found that to keep the oven clean and get the quiche to cook evenly I put the dish on a cookie sheet and then cover the quiche with a pot lid that I first spray with coconut oil. The lid keeps it from burning and I only take it off for a few minutes to brown it well at the end.
