This is the kind of breakfast that is delicious no matter what time of day you make it.
Ingredients
- 2 Large Sweet Potatoes
- 1 1/2 Cup Lacinto Kale
- 1/2 Small Onion
- 4 Red Bell Pepper
- 3 Chicken & Apple Sausages
- 6 Large Eggs
- 1/2 Cup Swiss Cheese
- 1/2 Clove Garlic
- 1 Drop Black Pepper Essential Oil
- 1 Toothpick Swab Thyme Essential Oil
- Olive Oil
- Dash Salt
Instructions
- In a cast iron skillet, brown sausage with chopped onion in 1 tablespoon of olive oil. Set to the side.
- Saute onion, garlic, bell pepper & diced sweet potato in the oil from the sausage.
- Stir in chopped kale (stems removed), add sausage, combine well then flatten in pan.
- Add essential oils to 1 teaspoon of olive oil and drizzle over potato sausage mix
- Using a serving spoon, press a 6 divets into surface then crack eggs into the wells. Sprinkle with salt & shredded cheese and place in a 350 degree, preheated oven until eggs are cooked to desired consistency. Serve Hot.
