I’m always looking for new ways to eat more vegetables and whole grains. When Young Living started farming Einkorn I got really excited about incorporating it into our diet. This is a delicious savory way to turn sweet potatoes into a main course. Add a little salad on the side and you have a full meal.
Ingredients
- For the Einkorn:
- 1/2 cup Young Living Einkorn Berries
- 1 1/2 cup Chicken Broth
- 2 Tbl Dried Onion
- 1 tsp Garlic Salt
- 1/8 tsp Montreal Steak Seasoning (or Pepper, to taste)
- 1 Clove Garlic, Minced Fine
- Potatoes:
- 3 Cloves Garlic, Minced Fine
- 1 Tbl Olive Oil
- 1/4 cup Chicken Stock
- To Taste Montreal Steak Seasoning (or Pepper)
- To Taste Garlic Salt
- 3/4 cup Shredded Mozzarella
- 3/4 cup Shredded Pecorino Romano
Instructions
- Cook the einkorn with the broth and seasonings until tender.
- add the minced garlic to some olive oil, toss the sweet potatoes in the oil then layer the sweet potatoes, einkorn and cheeses in a baking dish.
- Add the chicken stock and bake, covered, at 375 degrees until the sweet potatoes are soft, approximately 45 minutes.
- Serve warm.
