Ingredients
- Potatoes:
- 1 # Fingerling Potatoes
- 1/2 Small White Onion
- 1 Clove Garlic
- 3 Tablespoons Avocado Oil
- 1 Drop Rosemary Essential Oil
- 1 Drop Black Pepper Essential Oil
- Eggs:
- 4Eggs (2 Per Person)
- 3 Tablespoons Avocado Oil
- Salt & Pepper To Taste
- Salad:
- Micro-greens
- 1/2 Avocado
- 1/4 Clove of Garlic
- 1/4 Cup Avocado Oil
- 1 Tablespoon Balsamic Vinegar
- 2 Drops Jade Lemon Essential Oil
- 1 Drop Black Pepper Essential Oil
- 1 Drop Marjoram Essential Oil
Instructions
- Toss the potatoes in the oil with the avocado oil, crushed garlic and essential oil, roast at 400 degrees until easily pierced with a fork.
- For salad dressing mix avocado oil, vinegar, essential oils and crushed garlic, drizzle over micro-greens and sliced avocado.
- Place the avocado oil in a pan and turn it on low, when the oil is warm crack eggs into pan and cover until cooked to desired consistency, we like them runny.
