This holiday season was quiet for us, spent with just a few good friends, a crackling fire, some delicious food, and a twinkling tree. The gathering was dominated by the delight of this wonderful egg nog, made from scratch shortly after my good friend and neighbor Kate arrived. None of us was prepared for how lovely it was. It is thick without being heavy and the whipped whites add a delightful layered component to it that made it complex on the tongue. If you have never tried this, you should.
Ingredients
- 3 Eggs, separated
- 1/4 Cup Sugar
- Pinch Ground Cloves
- Pinch Fresh Grated Nutmeg
- 1/2 Tsp Vanilla (To Taste, Can Add More)
- 1 Cup Milk
- 1 1/2 Cup Heavy Cream
Instructions
- Whisk egg yolks, add 4 Tbsp of sugar, cloves and nutmeg, whisk again, add milk first, then the cream and vanilla. Whisk to blend thoroughly or, if you have one, use an immersion blender for a few moments
- Beat the egg whites with the balance of the sugar until soft peaks form.
- Pour milk mixture into 4 large glasses, if desired, add a shot of brandy/whiskey/khalua/etc (though it is excellent without it) spoon egg whites equally into each glass and grate a small amount of fresh nutmeg on top of the foam and enjoy
