Around our house, when your sick, or just need comfort food, you get one of two things: take out Tom Kha Kai Soup or Chicken & Rice. My wife’s had a cold for a few days and what with all the coughing, her stomach hasn’t been up to much in the way of food. I can tell she’s feeling better because she’s asking for food. So tonight I made a pot of Chicken & Rice, the bonus is that it’s pretty quick to put together and makes the house smell warm and nourishing.

Ingredients
- 3 lg Carrots
- 1 med Onion
- 3 ribs Celery
- 2 lg Portobello Mushrooms
- 4 cloves Garlic
- 32 oz Chicken Broth
- 4 Boneless Chicken Thighs
- 1 1/2 cups Rice
- 1/8 t Poultry Seasoning
- 1 T Olive Oil
- 1 T Butter
Instructions
- Mince carrots, celery, and onion then sauté in olive oil until onions are glassy.
- Chop mushrooms, add them and the butter to the other vegetables, sauté until browned.
- Add broth, garlic and the chicken thighs, simmer until the chicken is nearly cooked, then add the rice and simmer until the rice has absorbed most of the broth.
