Ingredients
- Crust:
- Doubled Pie Dough Recipe
- 1 Egg
- Berry Filling
- 1 # Blackberries
- 4 Teaspoons Lemon Juice
- 2 Drops Jade Lemon Essential Oil
- 1/4 Cup Water
- 2 Tablespoons Cornstarch
- Cream Filling
- 4 Ounces Cream Cheese (Room Temp)
- 1/3 Cup Raw Sugar
- 1 Large Egg Yolk
- 1/4 Teaspoon Vanilla Extract
- 2 Drops Lavender Essential Oil
Instructions
- Put blackberries, lemon juice, & essential oil on low in a saucepan, stirring often, until berries start to break down.
- Mix cornstarch with water in a small bowl, make sure ther are no lumps, then slowly incorporate into berries & bring to a low simmer, mixing regularly until the mixture gels.
- Cream the cream cheese, egg yolk, vanilla, lavender, & sugar well.
- Roll out dough & with a cookie cutter, cut into a top & bottom pieces, cut vent holes in the top crust
- Whisk egg to make egg wash. Spoon equal parts berry & cream into center of bottom crust, brush edges of crust with egg wash, cover with top crust, using a fork, press edges together. Brush the top with the egg wash sprinkle with raw sugar, then place on a cookie sheet. Bake 15 – 20 minutes at 400 degrees until golden brown.
