We have a few variations on this pot of deliciousness, this is the most recent iteration. This soup can be super easy and quick or complex depending on your mood. If you’re looking for a quick nourishing meal then use the packaged tortellini and cans of broth. If you want to get complex with it make the pasta and stock from scratch. Either way it’s delicious and is great for a party. I’m trying to get more vegetables into every meal we eat lately so this version of the soup has broccoli, celery, carrots, and tomatoes in addition to the usual spinach. You could probably toss in some finely chopped mushrooms, sweet potato and even cauliflower and it would be delicious.
I generally use a plain cheese tortellini as I feel that the broth and vegetables have enough flavor that adding something else to it actually takes away from the taste. This last round I used a chicken and apple sausage but I suspect any chicken sausage would be tasty, say a sweet or spicy Italian one might add some extra bite. Ingredients
- 1 lb Chicken & Apple Sausage
- 1 lb Cheese Tortellini
- 64 oz Chicken Broth
- 1 can Fire Roasted Tomatoes
- 1 bag Spinach
- 1 med Head Broccoli, Diced Fine
- 1/2 lg Yellow Onion, Diced Fine
- 2 ribs Celery, Diced Fine
- 2 Carrots, Diced Fine
- 4 cloves Garlic, Diced Fine
- 4 T Olive Oil
Instructions
- Sauté onion, broccoli, celery, and carrot in the olive oil, until the onion begins to go glossy, add the garlic.
- Add the chicken sausage and brown for a few minutes, being careful to not burn the onions.
- Deglaze the pan with the chicken stock then add the rest in to bring up to a low simmer.
- Add the can of tomatoes and the tortellini.
- Once the tortellini is cooked add the full bag of spinach.
- Serve immediately.
